Recently [personal profile] roozle and I stumbled across a BBQ joint on the outskirts of Utica and had one of those sublime sorts of experiences that would strain credulity if you saw it in a movie. The owner (and only employee) fed us great conversation and incredible food that stood with a foot firmly in the barbeque traditions of Appalachia and the other foot firmly in the modern fusion foodie universe. Grilled cornbread with scallions. Slaw made with rice wine vinegar. Sticky ribs falling off the bone, with miso in the sticky and peanuts on top. Smoky wings with Korean sauce. Street corn with quotation marks around the name that were somehow at once the kind of interpretation you expect from those and absolutely true to the essence of the original dish. Artisan root beers from across the country. We sat at the bar and told him to just feed us rather than picking what we wanted and you should do that too. All of it was glorious.
